natasha's white winter chili

1 lb lean ground pork (or two smoked ham cutlets, diced, or vegan sausage)

1 white onion, diced

1 tsp ground cumin

2 tsps chili powder

1 (16-ounce) can white navy beans, drained

1 (14-ounce) can white corn, drained

1 (14-ounce) can garbanzo beans, drained

1 (16-ounce) can of white kidney beans, drained

1 (14 1/2-ounce) can chicken broth (or vegetarian broth)

1 (4-ounce) can diced green chilies (mild, or hot)

1 cup cooked wild rice

in large saucepan, brown meat with onion. stir in cumin and chili powder; stir. stir in remaining ingredients; bring to a boil, cover and simmer for 15 to 20 minutes, until heated through and flavors are blended.

makes 6 servings. serve with white cornbread.

this mean is pretty cheap and easy to prepare (under 30 min). for camping, the ham and onions can be cut before leaving and the wild rice cooked, and chilled in the cooler. this shaves down a lot of time.
